CHICKEN NEWBURG 
1/3 c. butter
1/4 c. flour
2 c. milk
3/4 c. shredded cheddar cheese
1 tbsp. chopped pimento
1 tsp. salt
1/2 c. toasted, slivered almonds
1/2 c. sliced fresh mushrooms
1 1/2 c. cooked, sliced chicken
1/4 c. cooking sherry
1 tsp. minced onion
1/4 tsp. pepper

Melt butter and saute mushrooms for 2 minutes in chafing dish or over low flame on your range. Stir in flour until smooth. Add milk, stirring constantly. Add chicken and all other ingredients except almonds. Top with almonds just before serving. Serve with rice or patty shells.
