GOLUBTSI - RUSSIAN STUFFED CABBAGE | |
8 cabbage leaves, large 1 c. cooked rice 1/2 c. grated (Parmesan) hard cheese 1 lg. onion, finely chopped 1 hard boiled egg, chopped fine 1 lb. ground beef 1/2 c. milk 1/4 lb. butter 1/2 pt. sour cream Salt, pepper to taste 1 lg. can tomatoes Scald, drain and cool cabbage leaves. Mix milk, meat, rice, egg, cheese, onion, salt and pepper. Place on leaves roll, fold and tie. Brown the rolls in the butter. Put in baking pan, add the drippings and 1 large can tomatoes. Cover tightly and bake in moderate oven for 45 minutes. Uncover, add the sour cream and cook for 10 minutes more at low temperature. It has been 125 years since New Archangel, capital of Russian America, became Sitka, the capital of the Alaska territory, but some of customs and foods remain to be enjoyed. |
