CRUSTY PEACH COBBLER 
1 (2 1/2 lb.) can peaches
1/4 c. sugar
1/2 tsp. cinnamon

BISCUITS:

1 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. sugar
3 tbsp. shortening
1 egg, unbeaten
3 tbsp. milk

Arrange peaches in well greased pan. Combine sugar and cinnamon. Sprinkle over peaches. Sift flour, baking powder, salt, and 3 tablespoons sugar. Add shortening; cut until fine. Blend egg and milk. Stir in dry ingredients; stir until all dry particles are moistened. Drop spoonfuls of dough over peaches. Sprinkle remaining sugar over top. Bake at 400 degrees for 25 to 30 minutes. Serve warm with cream, if desired.
