MINTED LIME MOLD 
1 c. water
1 can (6 oz.) frozen limeade concentrate
2 pkgs. (3 oz. each) lime-flavored gelatin
1/2 c. cold water
1 1/4 c. ginger ale
1/8 tsp. peppermint extract
2 c. diced pears
1 c. honeydew melon balls
1 c. cantaloupe melon balls
Greens
Cantaloupe melon balls, if desired
Mint sprigs

1. Heat 1 cup water and the limeade concentrate to boiling. Pour over gelatin in large bowl; stir until gelatin is dissolved.

2. Stir in 1/2 cup cold water, the ginger ale and peppermint extract. Chill until partially set.

3. Stir in pears, 1 cup honeydew melon balls and 1 cup cantaloupe melon balls. Turn into 7-cup mold. Chill until firm. Unmold onto greens. Garnish with cantaloupe melon balls and mint.
