POLISH PIEROGI CASSEROLE 
10 to 12 potatoes, boiled and mashed
3/4 lb. longhorn or Colby cheese, grated
2 1/2 sticks butter (I use only 2)
2 med. onions, diced
1 lb. lasagna noodles

Cook noodles. Cook potatoes. Drain and mash. Add cheese to hot potatoes. Beat with mixer until cheese is melted. Saute onion in butter until soft. Add 1/3 of onions to potatoes and cheese mixture. Salt and pepper to taste. butter a 13 by 9 baking pan. Place layer of noodles and layer of potato mixture. Repeat ending with noodles. Pour remaining butter and onion over all. Cover with foil. Bake at 350 degrees until heated, about 30 minutes.
