TURKEY MEAT LOAF 
2/3 c. mashed potatoes
1 egg, beaten
1 lb. raw ground turkey
1/2 c. peeled, chopped tomato
2 tbsp. minced onion
1/2 tsp. lemon peel
1 tsp. salt
1/4 tsp. pepper
1/4 c. chopped parsley
1/4 tsp. sage
1/8 tsp. rosemary
1/4 tsp. thyme

Combine potatoes and egg. Add remaining ingredients and blend well. Form into loaf. Shape in shallow baking dish. Bake at 350 degrees for 50-60 minutes. Make gravy from drippings if desired. (If turkey mixture seems too moist, add 2-3 tablespoons of bread crumbs.)
