CHICKEN PAPRIKASH 
1 cut up chicken
1/2 tsp. salt
2 tsp. paprika
2 tbsp. olive oil
1 onion
1 c. chicken broth
1 tbsp. cornstarch
1/4 c. water

Wash and pat dry chicken. Sprinkle with salt and paprika. Heat oil in heavy pot; saute sliced onion until transparent. Add chicken and brown lightly, turning constantly. Add broth. Cover and simmer for 1 hour, or until chicken is tender.

Stir cornstarch into water; add several tablespoons of hot gravy. Then stir this mixture into gravy and continue to stir and cook until gravy is thickened. Makes 4 servings.
