APRICOT LOAF 
2 c. flour
2 tsp. baking powder
1/4 tsp. baking soda
1 tsp. salt
1 c. chopped dried apricots
2 tbsp. soft butter
1 c. sugar
1 egg
1 tsp. grated orange rind
1/2 c. orange juice
1/4 c. brandy
3/4 c. chopped pecans

Stir together flour, baking powder, soda and salt. Soak chopped apricots in warmed orange juice and brandy (about 15 minutes). Drain and save liquid.

Beat together butter, sugar and egg; add orange rind, orange juice and brandy. Beat to blend.

Add flour mixture and stir until moistened. Fold in apricots and pecans.

Put in greased and floured 9 x 5 x 3 inch loaf pan and bake at 350 degrees for 60 minutes or until done. Cool 10 minutes, then remove from pan and cool on rack.

For a more robust flavor use 1 cup white flour and 1 cup whole wheat flour, 1/2 cup white sugar and 1/2 cup brown sugar.
