ROANOKE ISLAND CRAB CASSEROLE 
3 tbsp. butter
2 tbsp. flour
1 egg, separated - beat white
1 c. milk - egg yolk
1 heaping tbsp capers
1 tbsp. chopped pimento
1/4 c. sherry wine
Ritz crackers, crushed
1 lb. crab meat

Make white sauce with butter, flour, milk and egg yolk. Beat egg white and set aside. Add capers, pimentos and sherry to above ingredients and cook until thickened. Fold in the egg white (beaten) and the crab meat and put into greased casserole - top with crushed crackers, dot with (butter), butter and bake in 350 degree oven for 30 minutes. Enjoy.
