SHRIMP CASSEROLE, SEA ISLAND 
1 1/4 lb. shrimp
1 sm. onion, chopped
1 can mushroom soup
Dash garlic salt
3/4 c. grated cheese
1/2 green pepper, sliced
1/2 c. sour cream
3/4 c. cooked rice
1 tbsp. butter
1/2 tsp. lemon juice
Salt and pepper to taste

Cook and clean shrimp. Saute onion in butter. Make a sauce by mixing soup, lemon juice and seasoning together. Fold in shrimp and rice. Fold in sour cream.

Pour into a 1-quart buttered baking dish. Sprinkle grated cheese on top and garnish with peppers (parboil peppers 2 minutes). Heat in a 325 degree oven for 30 minutes or until hot. Serves 4-6.
