VEGETABLE SANDWICH SPREAD 
3/4 c. grated carrots
1/4 c. minced cucumber
1/4 c. finely minced onion
Dash of salt
1/4 c. finely minced bell pepper
1/4 c. minced or grated celery hearts
2 tbsp. lemon juice
8 oz. pkg. cream cheese
Mayonnaise

Mix cream cheese with just enough mayonnaise to give it a good spreading consistency, then add the mixed vegetables.

Use thinly sliced sandwich bread, one slice of whole wheat, the other white.

Makes ten generous full size or twenty sandwich triangles.
