ZUCCHINI LOAF 
3 eggs
2 c. sugar
2 c. raw grated, undrained, very fine zucchini
1/2 tsp. baking powder
1 tsp. salt
2 tsp. vanilla
2 tsp. baking soda
3 tsp. cinnamon
1 c. oil
2 c. flour
1 c. chopped walnuts, chopped fine

Beat eggs until light and fluffy and foamy. Add sugar, oil and zucchini. Sift dry ingredients together, add to egg mixture. Mix well, add vanilla and walnuts. Pour into 2 greased and floured loaf pans. Bake at 350 degrees for 45 to 55 minutes.
