BROWNED STEW WITH DUMPLINGS 
2 lbs. cubed beef
2 tbsp. flour
3 tbsp. Crisco
1 sm. onion
1 1/2 tsp. salt
1/8 tsp. pepper
1 qt. boiling water
1 tsp. lemon juice

Cut meat into small pieces. Melt Crisco in hot fry pan or Dutch oven. Brown meat in hot fat, keep it sizzling hot until nicely browned. Sprinkle flour, salt and pepper over meat. Add the boiling water, lemon juice, and onion. Cover pan, lower heat so that meat simmer for 3 to 3 1/2 hours. The lemon juice improves flavor and tenderizes meat. When meat is tender, add dumplings.
