BOSTON BROWN BREAD | |
1 3/4 c. whole wheat flour 1 c. yellow corn meal 1/3 c. soy flour 1 tsp. baking soda 1 tsp. baking powder 1 tsp. salt 3/4 c. molasses 2 c. milk 3/4-1 c. currants or raisins Stir wheat flour and corn meal together well then add soy flour, soda, baking powder and salt; mix well. Stir all ingredients together. Grease cans with lids, 2 layers foil, grease layer next to bread dough. Fill mold 3/4 full. Use saucepan large enough for can to stand up and be covered with lid of pan. Have sufficient water to come 1/2 way up mold. Have water boiling. Tie foil on with string. Place mold in water, cover pan and regular heat so water is gently simmering. Steam until done, 1 to 1 1/2 hours. Have extra water boiling to add if necessary to keep level up. |
