ZUCCHINI ITALIANA 
2 1/2 lbs. squash
1/2 c. minced onion
3 oz. can mushrooms
1/2 c. green pepper
1 c. water
4 tbsp. butter
1 tbsp. sugar
2 tbsp. Parmesan cheese
6 oz. can tomato paste
1 pkg. dry spaghetti sauce mix
1 sm. pkg. Mozzarella cheese

Dice squash and cook 4-5 minutes. In butter, cook onions and peppers. Remove from heat and add mushrooms and juice, tomato paste, dry sauce mix, water and sugar. Mix well and simmer. Add cheese to sauce. Put squash in 10x6 inch pan. Top with sauce. Bake at 350 degrees for 35 minutes.
