SPLIT PEA SOUP | |
2 c. dried split peas 1 ham bone, with meat or 1 ham hock 1 lg. onion, chopped 2 carrots, peeled and chopped 1/4 tsp. dried thyme 1 tsp. salt Freshly ground pepper to taste 1 1/2 qts. water 1 qt. chicken stock Place all ingredients in large heavy pot. Bring to a boil, reduce heat and simmer for 1 1/2 to 2 hours. Remove ham bone from soup. Cool until it can be handled. Remove meat from bone and return meat to soup pot. Serves 8. |
