SQUASH CAKE 
3 eggs, beaten
2 c. sugar
2 tsp. vanilla
1 c. oil
3 c. grated squash (zucchini)
3 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3/4 c. coconut
3/4 c. nuts

Bake in 2 (9 inch) loaf pans for 1 hour at 325 degrees.
