CHILI EGGS 
2 med. or 1 lg. can Ortega green chilis (whole)
2 handfuls grated white Monterey Jack cheese
2 handfuls grated sharp Cheddar cheese
5 or 6 eggs (or more) beaten

Layer:

Open seeded chilis, laid flat

Jack cheese

Cheddar cheese

Repeat, then drizzle eggs over and bake 350 about 30 minutes or until clean knife. Let set a few minutes and serve with salsa if desired. (May be made ahead and refrigerated - Goody!) Serves 6-8.
