HOT BROWN 
4 tbsp. butter
4 tbsp. flour
1/2 c. grated sharp cheddar
Black and cayenne pepper
4 to 8 slices white bread
4 to 8 slices of tomato
Paprika
2 c. milk
1/2 tsp. salt
4 to 8 slices cooked turkey or chicken
4 to 8 slices of cooked country ham or cooked bacon
1 to 2 c. grated parmesan

Melt 4 tablespoons butter, in a saucepan and blending in 4 tablespoon of flour, stirring over low heat until mixture becomes a smooth paste; add 2 cups milk and 1/2 teaspoon salt, and continue stirring until sauce thickens. Add 1/2 cup grated sharp cheddar. Season with black and cayenne pepper. Toast 4 to 8 slices of white bread, 1 per person. Lay the toast pieces in a large shallow baking dish. Top each piece with then slice of turkey or chicken, a generous spreading of sauce, a slice of ham or cooked bacon, a large slice of tomato, more cheese sauce to cover it all, and a sprinkling of parmesan, sprinkle with paprika. Bake at 350 degrees for 20 minutes then broil until bubbly and brown.
