RICE-CASHEW CASSEROLE | |
1 med. onion, chopped 1/4 c. butter 1/2 lg. green pepper, chopped 1 1/4 c. regular rice, uncooked 2 (10 3/4 oz.) cans beef consomme 1 (4 oz.) can sliced mushrooms, drained 1 (6 oz.) can cashews Saute onion and green pepper in butter. In a 2-quart casserole, combine all the ingredients except cashews. Bake covered at 325 degrees for 45-50 minutes. Add cashews, stir, and bake an additional 10 minutes. 6-8 servings. NOTE: Rice is not cooked ahead! |
