CASHEW CHICKEN CASSEROLE 
1/4 c. onion
1/2 c. celery
2 tbsp. butter
1/2 c. chicken broth
1 can cream of mushroom soup
2 tbsp. soy sauce
1 1/2 c. cooked rice
2 c. chicken
Cashew nuts
Chow mein noodles

Cook onion and celery in butter until tender. Add mushroom soup, chicken broth and soy sauce. Simmer for a few minutes. Add cooked rice and chicken. Pour in 9"x13" baking pan and bake for 15 minutes at 350 degrees. Take from oven and sprinkle top with cashew nuts and chow mein noodles. Return to oven and bake 2 minutes more. Quick, easy and very good.
