SWEET POTATO SOUFFLE 
1 cup milk
1/2 cup sugar
1/2 tsp salt
3 tbsp butter
1 tsp nutmeg
2 cups sweet potatoes, mashed
2 eggs, separated
1/2 cup raisins
1/2 cup pecans, chopped
marshmallows

Scald milk. Add sugar, salt, butter, nutmeg and potatoes. Beat with mixer until fluffy. In small bowl, beat egg yolks until light and lemon colored. Add to potato mixture. Add raisins and pecans. In separate bowl, beat egg whites until stiff. Fold into potatoes and pour into greased baking dish.

Bake at 350°F 50 - 60 minutes, or until firm. Top with marshmallows and brown. Note: Do not open oven during baking time or souffle will fall.
