GUAM FRIED RICE WITH HAM AND
BACON
 
3-4 c. cooked and cooled rice
1 lb. bacon, cut into sm. strips
2 eggs, beaten
1 c. ham, diced
1 can sm. shrimp, drained (optional)
1/2 c. chopped onions (or scallions)
Garlic salt to taste
Soy sauce for extra flavor

Fry bacon strips until crisp. Remove and set aside. Pour off half of the bacon fat. Stir fry onion in the same fat then add cooled rice and continue cooking at medium heat for a few minutes until the rice is not sticking together. Add crisp bacon, shrimp, and mix well. Push rice mixture to sides of skillet.

Fry beaten eggs on bottom of the pan until done. Then mix in with the fried rice. Season with garlic salt and soy sauce to taste. Serve with fried eggs.

Option: lowfat: use vegetable oil instead of bacon fat.
