HAM AND RICE CASSEROLE 
1/4 c. finely cut onion
1/4 c. finely cut green peppers
2 tbsp. lard
3/4 c. diced cheese
1/2 c. milk
1 can cream of mushroom soup
2 c. cooked rice
4 hard cooked eggs, finely cut
3 c. finely cut ham

Brown onion and green pepper in shortening; remove from heat, add remaining ingredients. Mix well. Place in 3 quart casserole, bake 350 degrees for 1 hour. Serves 8.
