CHOCOLATE COVERED COCONUT CREAMS 
3/4 c. cold mashed potatoes
4 c. sifted powdered sugar
4 c. flaked coconut
1 1/2 tsp. vanilla
1/8 tsp. salt
1 lg. chocolate bar

Combine above ingredients. Press into greased 8-inch square pan. Over hot water, melt chocolate bar and spread over candy. When firm, cut into 1-inch squares.

VARIATION: Roll candy into small balls. Chill until firm. Dip candies into dipping chocolate. Place on wax paper to harden. Swirl a bit of chocolate over hole made by toothpick.

DIPPING CHOCOLATE:

2 squares dark chocolate
3 oz. (1/2 c.) chocolate chips
1 inch square paraffin
2 tbsp. butter
1 tsp. vanilla

Melt in double boiler.
