PORK CHOPS WITH PLUM SAUCE 
4 thick loin pork chops
Salt and pepper
Pinch of sage
2 tsp. flour
1 c. pureed canned plums
1/2 c. port wine
1 tsp. grated lemon peel
1/4 tsp. ground cloves

Season chops with salt, pepper and sage. Flour lightly and brown on both sides in hot fat. Remove chops to shallow baking dish. Mix remaining ingredients and pour over chops. Cover and bake at 325 degrees for 1 hour.
