SUPERB APPLE CRUMB PIE 
1 to 1 1/4 c. sifted all purpose flour
1/2 tsp. salt
1/2 c. shortening
3 tbsp. ice water

Into the large bowl of the electric mixer, sift the flour and salt. Add half of the shortening to the flour mixture. Beat on No. 2 speed until mixture is very fine, about 2 minutes. Scrape bowl while beating. Add the remaining shortening and beat only until shortening is in larger particles, about 1 minute. Gradually add the ice water. Beat on No. 1 speed just enough to make dough hold together. Roll dough 1/8 inch thick and line a 9 inch pie plate.

FILLING:

5 to 7 tart cooking apples (5 cups)
1/2 c. sugar
2 tbsp. flour
1 tsp. cinnamon
1/2 c. sugar
3/4 c. all purpose flour
1/3 c. butter
Whipped cream
Cinnamon sugar

Pare apples; cut into eighths. Arrange apples in a 9 inch unbaked pie shell. Combine 1/2 cup sugar, 2 tablespoon flour and cinnamon; sprinkle over apples. In small bowl mix 1/2 cup sugar and 3/4 cup flour. Cut in butter until mixture is crumbly. Sprinkle over apples. Bake in a 400 degree oven for 40 to 45 minutes or until done. Cool. Garnish with whipped cream and cinnamon and sugar mixture.
