2 c. flour
4 tsp. baking powder
1/4 c. sugar
1/2 tsp. salt
1 egg
1 c. orange juice
2 tsp. orange zest
1/4 c. melted butter

Combine all ingredients in order given, mixing just until incorporated. Do not beat.

Bake in well-greased muffin pans in 400°F oven for 20 minutes.

Makes 12 muffins. If small pans are used, bake for only 10 to 12 minutes.
