ORANGE PINEAPPLE MUFFINS | |
3/4 c. all-purpose flour 3/4 c. whole wheat flour 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. cinnamon 2 c. crushed pineapple, drained well 1/4 c. orange juice 2 egg whites 1 tbsp. plus 1 tsp. vegetable oil 1 1/2 tsp. vanilla 1 tsp. grated orange peel 1/4 c. sugar Preheat oven to 375 degrees. Lightly spray 8 muffin cups. In large bowl combine flours, baking powder, baking soda and cinnamon. Mix well. Measure 1 full cup of drained pineapple. Place in blender and blend for a few seconds, then add remaining ingredients except remaining pineapple to blender. Blend until smooth. Add blended mixture to dry ingredients along with remaining pineapple. Mix until all ingredients are moistened. Spoon batter into muffin tin. Bake 20 minutes. Do the toothpick test. If it comes out clean muffins are done. 174 calories; 3 fat grams, 1/2 fruit serving, 1/2 fat serving, 1 bread serving. |
