CARROT PINEAPPLE MUFFINS 
1 c. sugar
2/3 c. oil
2 lg. eggs, beaten
1 1/2 c. all-purpose flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 tsp. vanilla
1 c. finely grated carrots
1 c. crushed pineapple, drained

In beater bowl, combine sugar, oil and beaten eggs. In another bowl, combine and mix well all dry ingredients. Add these to sugar and oil mixture and stir to moisten. Add grated carrots, pineapple and vanilla. Bake at 375 degrees for 20 minutes. Chopped nuts may be added if desired.
