CUSTARD PIES 
2 c. milk
3 eggs
1/2 c. sugar
1/2 tsp. salt
1/8 tsp. nutmeg
1 tbsp. melted butter
1/2 tsp. vanilla
9" pastry lined shell

1. Scald milk. Beat eggs slightly. Add sugar, salt, nutmeg, butter and vanilla; add milk.

2. Pour into a pastry lined pan and bake in preheated oven.

3. Bake until just set. Center should still shake slightly. Note: Chill the pastry lined shell thoroughly before filling with custard to prevent soaking under crust.
