MARINATED MUSHROOMS 
1 lb. sm. fresh mushrooms, washed
1/3 c. red wine vinegar
1/3 c. salad oil
1 sm. onion, thinly sliced
1 tsp. salt
2 tsp. parsley flakes
1 tsp. prepared mustard
1 tbsp. brown sugar

Combine above ingredients in saucepan (except mushrooms) and heat. Add mushrooms and bring to a boil. Simmer 5-6 minutes (or until not too brown), stirring constantly. Pour into jars and refrigerate.
