OPOSSUM WITH SWEET POTATOES | |
1 opossum, caught and fed buttermilk and cornbread for a couple of weeks, cleaned and skinned whole 6 sweet potatoes, boiled and mashed 1/2 cup (1 stick) butter touch of cinnamon, clove and allspice Boil sweet potatoes. Drop in cold water. They will peel easy. Mash with spices and butter. Make a bed of the sweet potatoes on a casserole dish large enough to hold the opossum. Position the opossum with the head at one end and the tail curled at the other. Bake at 350°F till crispy or a 150°F internal temperature. Note: The grease from the opossum will flavor the potatoes.
