OLD ENGLISH HERB CHEESE 
4 oz. sharp Cheddar cheese, shredded
3 tbsp. dry sherry
2 tbsp. whipping cream
1/2 tsp. salt
1/2 tsp. parsley flakes
1/2 tsp. minced chives or green onion tops
1/8 tsp. white pepper
1/8 tsp. dried sage leaves
1/8 tsp. dried tarragon leaves
1/8 tsp. dried thyme leaves
1/8 tsp. dried chervil leaves
1/4 tsp. prepared mustard

1. Combine all ingredients except crackers in top of double boiler. Heat over simmering water, stirring constantly, until cheese melts and mixture is smooth. Pour into 2 small decorative pots or custard cups; cool. Refrigerate covered until serving.

2. Serve cheese at room temperature with assorted crackers or English biscuits.

TIPS: English crackers can be purchased in specialty stores.
