APPLESAUCE COFFEE CAKE 
1 3/4 c. flour
1/2 c. sugar
1/2 c. butter
2 beaten eggs
1 tsp. vanilla
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1 c. chunk style applesauce
1/4 c. chopped nuts
1/2 tsp. ground cinnamon
1/2 tsp. salt

Stir together 3/4 cup flour and the sugar, cut in butter until crumbly. Set aside 1/2 cup of crumbs mixture for topping. To remaining crumb mixture add eggs and vanilla, beat by hand until smooth. Stir together remaining 1 cup flour, baking powder, soda and salt. Add dry ingredients and applesauce, stirring alternately to beaten mixture. Turn into a greased 8"x8"x2" baking pan. Stir nuts and cinnamon into reserved crumb mixture, sprinkle on top. Bake in 375 degree oven for 30 minutes or until done. Serve warm.
