ZUCCHINI OMELETTE 
2 tbsp. butter
2 sm. zucchini
1/4 c. chopped onion
1 clove garlic
2 lg. eggs
1/4 c. cheese
1/4 c. wax peppers
1/4 c. cream cheese

Season zucchini, saute in 1 tablespoon of butter along with onion and garlic. Set aside. In clean skillet, melt 1 tablespoon butter. Pour in beaten seasoned eggs. When eggs are just about done, pour zucchini and onion in half of omelet. Top with wax peppers and cream cheese. Fold in half, top with cheese and place in oven at 350 degrees for 5 minutes.
