COCONUT PIE 
1 c. sugar
1/2 can evaporated milk
1 sm. can coconut
2 egg yolks
1/2 can water (evaporated milk can)
3 tbsp. self-rising flour
1 pie crust

ICING:

2 egg whites
1/4 c. sugar
Dash of salt

Bake pie crust. Mix sugar, flour, egg yolks, milk and water together. Just before it comes to a boil, add coconut. When it comes to a boil, put it in the pie crust.

ICING: Beat egg whites just a little. Add a dash of salt and mix in. Then add 1/4 cup sugar and mix in. Save a little coconut for the top. Brown at 350 degrees.
