CRUSTLESS COCONUT PIE 
2 c. sugar
1/2 c. self-rising flour or (1/2 c. all-purpose flour and 1/2 tsp. baking
powder, 1/4 tsp. salt)
1 stick butter, melted and cooled
4 eggs
2 c. milk
2 c. coconut

Place butter, milk and eggs into a blender. Then add all dry ingredients except coconut. Blend 7-8 seconds. Pour into two 8 or 9 inch pie pans. Sprinkle coconut over mixture. Bake for 45 minutes at 350 degrees.
