CREAMY CHICKEN CHIPOTLE PENNE ON GARLIC BREAD | |
4-10 pieces skinless chicken breasts 1 tbsp. chicken bouillon (optional) 1 tbsp. extra virgin olive oil (optional) 2 (12 oz. ea.) boxes Ronzoni smart taste Penne Rigate 3 tbsp. butter 2 (8 oz. ea.) pkgs. Philadelphia cream cheese 1 (7 oz.) can La Costena Chipotle in Adobe Sauce Garlic Bread: 16 slices Texas Toast 1 1/2 tbsp. garlic powder 1 tbsp. dried parsley 1/2 cup (1 stick) butter, melted Boil chicken until cooked. (Optional: add 1 tablespoon of chicken bouillon to water to add taste and 1 tablespoon of extra virgin olive oil to soften dry chicken). DO NOT DRAIN BROTH when finished cooking thoroughly as you will need the broth for the Penne and the Chipotle cream sauce. When cooked fully, remove the chicken from the broth and place on cutting board to pull apart, shred chicken and place in a bowl to hold for later. Use half the broth with an equal amount of water and 3 tablespoons of butter to boil the Penne Rigate Noodles. Cook till desired tenderness is reached. Drain and rinse with cold water and let chill. At this time, it is advised that you preheat the oven to 425°F. Next place 2 packages of room temperature cream cheese (optional to use less fat cream cheese) into 44 oz. or larger blender. Add 1 cup of broth and depending on how hot you want the sauce to taste you can add three quarters to one quarter of the Chipotle in Adobe Sauce to the mix. The sauce will be thick but liquid in consistency. You will add the left over chicken broth to the sauce in the pot to create enough sauce to saturate the chicken Chipotle. After you have made the cream, you may begin to place the garlic bread in the oven, Mix garlic powder, parsley and melted butter together. Brush butter mixture on one side of each slice, Bake till they are stiff enough to sustain pasta as a finger food. While the toast is baking, you will place the shredded chicken in a large pot and layer with the pasta. When all the chicken and pasta has been combined you will add the cream sauce then just splashes of the left over broth while mixing well until the pasta is saturated to desire.
