“SHERRY'S CHICKEN WITH CREAMY GARLIC DRESSING” IS IN:

SHERRY'S CHICKEN WITH CREAMY
GARLIC DRESSING
 
4 (4 oz) boneless, skinless chicken breasts
1 tsp. olive oil
salt and pepper, to taste

DRESSING:

1 cup lo-fat sour cream
1 tsp. oregano
1/4 tsp. black pepper
1 tbsp. lemon juice
1 tsp. minced garlic
2 cups seasoned breadcrumbs
salt and pepper, to taste
Paprika
2 tbsp. 1% milk

Preheat oven to 350°F.

Lightly coat chicken with oil, salt and pepper.

In a bowl, mix together sour cream, oregano, salt, pepper, lemon juice, and garlic. Reserve 1/2 cup for dressing.

Coat the chicken in the remaining sour cream mix, then carefully dip into the breadcrumbs to coat. Spray a baking pan with cooking spray. Put chicken on pan, spray, lightly, the tops of chicken with cooking spray. Sprinkle with paprika.

Bake for about 25 minutes, or until chicken is cooked through. Whisk 2 tablespoons milk into the reserved sour cream mix, blend well.

Serve chicken with a dollop of dressing on top of chicken.
