APPLE BREAD 
3 c. flour
2 tsp. cinnamon
1 tsp. baking soda
1/2 tsp. baking powder
1/2 tsp. salt
1/2 c. vegetable oil
2 c. sugar
2 eggs, beaten
1/2 tsp. vanilla
2 c. apple, peeled, cored and coarsely chopped
1 c. broken walnuts

In bowl combine flour, cinnamon, baking soda, baking powder and salt, set aside.

In large mixing bowl place oil, sugar, eggs, vanilla and apples. Stir into flour mixture. Add walnuts and mix. Divide mixture between 2 greased 8 x 4 bread pans.

Bake at 350°F for 40 to 45 minutes or until bread tests done. Cool for 10 minutes on wire rack before removing from pans.
