MOCK KENTUCKY CHICKEN 
3 c. self-rising flour
1 tbsp. paprika
2 pkg. Lipton tomato cup of soup powder
2 pkg. Good Season Italian dressing mix powder
1 tsp. salt
9 pieces of 3 lb. chicken
1 tbsp. salt
1 gal. cold water
1/4 lb. butter

Soak chicken in 1 tablespoon salt and 1 gallon cold water for 3 or more hours in the refrigerator. Place first 5 ingredients in a 1 gallon plastic bag and shake to mix well. Remove chicken from water a few pieces at a time and place in the plastic bag and shake to coat well. Let dry on wire rack 30 minutes. Arrange chicken skin side up in baking pan and brush with 1/4 pound butter that has been melted. Bake for 1 hour at 350 degrees.
