APPLE WALNUT CAKE 
3 eggs, beaten
2 c. sugar
1/2 c. vegetable oil
2 tsp. vanilla
2 c. flour
4 c. diced, unpeeled apples
2 tsp. baking soda
2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. salt
1 c. walnuts, chopped coarsely

In large mixing bowl, beat together eggs, sugar, oil, and vanilla. Combine flour, baking soda, cinnamon, nutmeg and salt. Mix into batter. Fold in apples and nuts. Spread into 13 x 9 x 2 inch greased and floured pan. Bake at 325 degrees for 50-60 minutes. Cool and frost.

CREAM CHEESE FROSTING:

6 oz. cream cheese
1/4 c. butter
1 1/2 c. confectioners sugar
1/2 tsp. vanilla

Beat all ingredients until creamy. Spread frosting on cooled cake.
