TWO CHEESE CHICKEN ROLLS 
4 lg. boned, skinned chicken breasts
2 oz. Swiss cheese cut into 2-inch strips
2 tbsp. crumbled blue cheese
2 beaten eggs
1 c. fine bread crumbs
1 tbsp. melted butter

Place chicken pieces between two pieces of plastic wrap. With mallet from center outward form cutlets 1/4 inch thick. Peel off wrap. Sprinkle chicken with salt. Place strip of Swiss cheese and blue cheese at end of cutlet. Roll up jelly roll fashion tucking in sides. Press end to seal.

Coat with flour, dip in eggs, roll in bread crumbs. Chill for 1 hour. Sprinkle melted butter over chicken before baking in 325 degree oven for 40-45 minutes.
