CARROT CAKE WITH BUTTERMILK
ICING
 
1 1/2 c. oil
4 eggs
1 tsp. cinnamon
1/4 tsp. black walnut flavoring
2 c. sugar
2 c. self-rising flour
3 c. grated raw carrots
1 tsp. vanilla
1 c. chopped black walnuts

BUTTERMILK ICING:

1 c. sugar
1/2 tsp. baking soda
1/2 c. buttermilk
1 tbsp. Karo syrup

Cake: Cream sugar and oil. Add eggs, one at a time. Add rest of ingredients. Mix well. Bake 1 hour at 350 degrees in a greased tube pan.

Icing: Mix all ingredients in saucepan and bring to a boil. Pour over cake. Let stand until cold.
