CARROTS MAYONNAISE 
6 carrots, peeled and sliced crosswise
Boiling salted water
Salt and pepper
1/4 c. mayonnaise
1 tbsp. chopped fresh parsley
1 tsp. lemon juice
Garlic

Cook carrots, covered, in boiling salted water just until tender. Drain; season with salt and pepper. Combine mayonnaise, parsley and lemon juice and toss lightly with hot carrots. Serve immediately. Makes 4 servings.
