MARY TERESA'S BEEF NOODLE
CASSEROLE
 
2 lb. ground beef
1 (12 oz.) pkg. Dutch egg noodles
1 cup chopped green pepper
1 cup chopped onion
2 tbsp. olive oil
2 cups cottage cheese
1 cup dairy sour cream
1 (6 oz.) small can tomato paste
2 (8 oz. ea.) cans tomato sauce
salt and pepper, to taste

Heat oven to 375°F. Cook noodles and drain.

While noodles are cooking sauté peppers and onions in oil until soft. Season with salt and pepper to taste. Remove onions and peppers from sauté pan, and add ground beef. Sauté until brown, breaking up ground beef while cooking. Add salt and pepper to taste. Combine onions and peppers with beef and heat all through.

While noodles and beef mixture cooks, mix cottage cheese, dairy sour cream, and tomato paste in a bowl. When noodles are cooked, mix noodles into cottage cheese and tomato paste mixture.

In Dutch oven, spread a couple of tablespoons of tomato sauce on the bottom. Then start layering noodles followed by beef, continue with noodles, and then beef. Should make about three layers of each. Top layer will be beef when finished layering. Now distribute tomato sauce evenly over the top of the casserole. Place cover on Dutch oven.

Bake at 375°F for about 60 minutes.

I added dash of garlic powder to the beef while browning. Also, next time I might throw in some shredded cheddar between layers. Thank you for sharing!
