LASAGNA | |
MEAT SAUCE: 2 lbs. hamburger 1 clove garlic, minced 1 tsp. whole basil 1 1/2 tsp. salt 1 (1 lb.) (2 c.) can tomatoes 2 (6 oz.) cans (1 1/2 c.) tomato paste CHEESE SAUCE: 3 c. creamy cottage cheese 1/2 c. grated Parmesan or Romano cheese 2 tsp. parsley flakes 2 eggs, beaten 2 tsp. salt 1/2 tsp. pepper 1 lb. Mozzarella cheese, grated or sliced thin Brown meat, spoon off fat. Add next 5 ingredients. Simmer 30 minutes. Cook noodles, careful not to overcook; leave firm. Combine remaining ingredients, except Mozzarella cheese. Place noodles in pan, spread with cottage cheese filling, then Mozzarella cheese, then meat sauce. Repeat! Bake at 375 degrees for 30 minutes. Let stand 10 minutes before cutting. This freezes fine, may prepare and store in refrigerator. (I have made it the night before). Let lasagna bubble good while baking (takes a long time, one hour or so if refrigerated before). |
