YAM MALLOW CASSEROLE 
Once you make this for Thanksgiving, you'll have to make it forever. Tastes like pumpkin pie!

1 lb. yams (1 1/2-2 yams)
1/2 c. unsalted butter
1/4 c. heavy cream
3/4 tsp. cinnamon
1/4 tsp. salt
1/2 c. cream of coconut
3 egg yolks
1/2 tsp. nutmeg
24 lg. marshmallows

Boil yams until tender (peel while hot). Place in mixing bowl with butter, cream of coconut, egg yolks, heavy cream, 1/2 teaspoon cinnamon, nutmeg and salt.

Whip until smooth. Place in 2 quart casserole. Press marshmallows into mixture until half submerged. Sprinkle with remaining 1/4 teaspoon cinnamon. Heat oven to 350 degrees. Bake 30 minutes or until marshmallows are melted.

Cut up yams before mixing in bowl with other ingredients.
