QUICK CHICKEN CASSEROLE 
2 cans chunk chicken, do not drain
1/3 c. chopped onion
2 eggs, slightly beaten
1/2 c. mayonnaise
1 can cream chicken mushroom soup
1 sm. can sliced mushrooms (opt.)
1 scant c. quick-cooking rice (I use Success)
3/4 c. water or chicken broth
1 1/2 c. grated cheddar cheese

Mix all ingredients, except 1/2 cup of the cheese and place in a 9 x 13 inch baking dish. Sprinkle remaining 1/2 cup cheese over top and bake at 375 degrees for about 45 minutes.

To speed up cooking time, rice can be precooked in microwave (according to package directions). Be sure to omit water or chicken broth if you do.

Since microwave ovens vary in power, you may need to adjust your cooking time.
